Variable Weight Ribeye Case (11-12 lbs)

These variable weight steaks are where the value is at! At Lot 279, we sell some of our chophouse products through other websites, which demand a perfectly portioned steak. That’s why these steaks are variable in weight – they are incredible tasting end cuts, which are steaks that are a little too large or too small to sell elsewhere. These are still all individually packaged. We like to use the smaller steaks for steak fingers or fajita meat. The larger steaks we use just as you would any of our other products. These variable weight steaks come in at under $9/lb, and are in cases that range from 11-12 lbs.

Seared Ribeye

Pan method

  1. Generously coat the steak with flaky salt and pepper.
  2. Heat a skillet over medium high to high heat.
  3. Once the pan is very hot, add the ribeye.
  4. Sear for 4-6 minutes per side, or until medium rare (an internal temp of 125° F)
  5. Remove from the pan, let rest for 5 minutes. As the ribeye rests, it will continue to cook to a perfect medium rare.

Grill Method

  1. Generously coat the steak with flaky salt and pepper.
  2. Grill over medium-high hear 4-6 minutes per side, or until medium rare (an internal temp of 125° F)
  3. Remove from the pan, let rest for 5 minutes. As the ribeye rests, it will continue to cook to a perfect medium rare.
