Sauteed Mussels
Ingredients:
1 lb mussels
1 stick pure butter
½ cup chopped red onion
2 tablespoons of fresh minced garlic
¾ cup Chardonnay or Sauvignon Blanc white wine
Optional- ½ cup heavy cream
8 slices of baguette rubbed with olive oil and toasted
Preparation:
Rinse mussels in colander under cold water
Melt 1 stick of pure butter in skillet on medium heat, add in fresh minced garlic and red onions and sauté for until translucent (about 2-3 minutes)
Add mussels to skillet and then pour Chardonnay or Sauvignon Blanc wine over top and stir to mix with existing ingredients (the better the wine the better the sauce)
Cover the skillet and cook for 1 additional minute then remove from heat
Optional- at this point you can also add ½ cup of heavy cream to the skillet and stir in with the mussels
Remove any unopened mussels and pour the remaining opened mussels and garlic/onion/wine/cream sauce in large bowl with baguette slices added on the side
